I’m heading up (from freezing Melb!) next month and this looks like exactly the sort of ride I’ll add to my itinerary.

Any idea what sort of temperatures / weather to expect through these hills in July?

That time of year the weather is high 10s during the day and single digits at night. But doesn’t have the same bite as Victoria. Just keep in mind some of the roads do have gravel, but it’s hard packed
